February 2013 Recipe of the Month: 

Easy Beans and Greens




Prep time: 10 minutes
Cooking time: 10 minutes
Yield: 2-3 servings

Ingredients:
1 can black beans (or pinto, red, kidney—your choice)
1 bunch collard greens (or kale, spinach—your choice)
your favorite toppings, such as salsa, avocado or guacamole and sour cream

Directions:
1.   In a medium saucepan, heat drained beans. Add your favorite seasonings, if desired.
2.   Fill a separate medium saucepan with 1-2 inches of water and bring to a boil.
3.   Wash and chop greens (you can use the stems, too) and add to boiling water. 
4.   Cook for 2-3 minutes until greens are bright green and tender. Drain off water.
5.   On a plate, arrange a portion of the greens, top with a portion of the beans and finish with toppings of your choice.

2012 Closing Remarks...

Thirty one days left to experience 2012.  Thanksgiving is tomorrow. Reflection and gratitude are constant and the future is now. Learning from masters the art of healing naturally through mind-body-spirit connections motivates me to continue the journey into the unknown world of serving others. Everyday is a day to remember that all things that matter come from a place of love and revernce for all life. Someone once said "the best things in life are free". The most important things in life are not really things. They are intangible yet to the minds eye and the souls touch.

Breast Health Tips: Breast Cancer Prevention

Lifestyle: most valuable-> 1. Exercise 2. Maintain appropriate weight 3. Meditate 4. Avoid products with Parabeans & SLS (Sodium Laurel Sulfates; often used in shampoos, toothpaste, bath gels, bubble baths)
Dietary: most valuable-> 1. Eat (organic) cruciferous  & green veggies daily. Think broccoli, cabbage & cauliflower 2. Decrease animal proteins (including dairy) & eliminate refined sugars, limit fruit sugars 3. Increase fiber 45grams daily (bean, legumes, whole grains etc) 4, Add 2 tbsp of freshly ground flaxseeds daily to your salads & smoothies.
Supplements: most valuable-> 1. Whole food multi-vitamin w/ minerals, incl. 100-200mcg of selenium & 30 mg of zinc.
